Simple Roasted Zucchini & Red Pepper
1) Preheat oven to 400 degrees.
2) Chop Zucchini & Red Pepper
3) Drizzle with Olive Oil and season with desired seasoning*
4) Roast until browned.
*My "go-to" fav seasonings: Garlic, Dill, Salt & Pepper
